Decent quality, bit expensive.
Hopefully a substitute for rice - but it is very fine-grained so can easily become a stodgy ball. Needs timed preparation - and some seasoning! I'm trusting that it's a really healthy purchase.

Gluten-Free Couscous!
This is my second purchase of Fonio. Being coeliac, I can’t eat normal couscous and other gluten free alternatives take a lot longer to prepare. Fonio, however, can be quickly prepared like normal couscous and my family tells me it’s fairly similar in taste and texture (though not similar enough for them to want to eat it). I enjoy it as a kind of porridge too sometimes. I am very sensitive to gluten contamination and I am happy to say that this brand of fonio is definitely gluten-free.

A nice substitute for Cous Cous or Rice
At first when I made it as per the instructions, couldn't stop it from being a bit stodgy. Now developed my own method which I would recommend, cooks so quickly its worth standing and doing this. 60g of Fonio (2 servings), 120ml of cold water, half a stock cube of your choice together in a pan, stir with a balloon whisk as it warms, boil your kettle, as pan comes to boil turn heat down low, continue to stir until stock cube disolved, if needed add little water from the kettle, stir gently, turn off heat and leave covered, stir occasionally. You may get a little sticking to bottom but this soaks off easily. Result is lovely tasty seperate grains. Good with any topping...
