Ciao, Parmigiano Reggiano should be stored in a cool cellar below 14°C/57°F under vacuum or at best in the refrigerator. You can store it under vacuum for up to 6 months. Once opened wrap it in the greasproof paper we will send you and store it in the refrigerator, or vacuum pack it again if you have a vacuum sealer.
