Are they soft and chewy or hard and crunchy?

They're soft, but not chewy. The only crunchy bits are the occasional chia seed, but they're tiny. This is like eating very thick peanut butter. I switched from these to 22 Days Nutrition bars. 20g's of plant based protein, no soy, non gmo, etc. They're very tasty, and about twice the size of an Raw Rev bar.

If thery're non-gmo, why don't they have the non-gmo project verified symbol on them?

All Raw Rev bars carry the Non-GMO Project verification. The previous answer was from 2017.

How many net carbs per bar?

Depends which bar. The creamy peanut buttr & sea salt bar is 3 net carbs. 17 g carbs, 14 g fiber.
