Unpasteurised, unheated, unfiltered, single origin.Our Wildflower honey may differ in fragrance and flavour from harvest to harvest. The exact composition depends on the kind of pollen favoured by the bees during the season. It’s something that our beekeepers never interfere with.Think of Wildflower Honey as a cocktail of different flower contents, rather than the produce of a single, distinct source. In order to be classed as Raw Wildflower Honey, the results need to bottled and sold as they were first obtained from a beehive, without being treated, preserved or pasteurised. You'll notice the difference when you buy Raw Wildflower Honey over a traditional supermarket squeeze bottle. How quickly it crystallises and how hard it becomes depends on the ratio of glucose-v-fructose and maturity of the harvest. Should you wish to reinstate it to its original, runny condition, simply put the jar on a radiator overnight or through a dishwasher cycle. In case of the latter method, please make sure that the jar is sealed tightly and that the wash cycle (up to 44°C), in order to maintain the honey's enzymatic and nutritional value.
