How accurate are these servos in terms of getting them to stop at a specific angle?

They are as precise as the standard micro servos.

How do you get these servos to keep a zero? Mine keep being a little bit off zero in different directions every reboot

Manual adjustment: There is a potentiometer at the bottom of the servo, middle-point adjustment potentiometer

What is the voltage limit for these? I'm not talking about the rated voltage. I need to know how much I can get out of these before they break.

Since they are PWM to vary speed, I am not sure why you would want to exceed the specifications. With a 5V PWM I once accidentally applied 9V on the DC supply line for a short duration < 1 minute and they survived. Why would you want to exceed the specification intentionally?
