Either will work. I prefer after the pizza has baked so as not to char the seasoning.

King Arthur does not state this is gluten free because of cross contamination in the factory. Not all seasonings are gluten free.

Not exactly. i just checked at the King Arthur site, and It's $8.95 there plus $6 shipping, so the total would be $14.95.
