it says this does right and left angles, maybe i'm really dumb but how do i get a left angle with the thumb screw in the way

You need to push the silver piece down through the green portion and out the other side, in order to flip it around. You assign the one inch when you do that actual cut

is this sold as a pair?

No, just one unit. The scribe can be used from both sides, so you only need one to mark siding on opposite walls.
